5 Easy Recipes to Make During COVID-19

1. Dalgona Coffee

If you don’t own an espresso machine or miss going to cafes, this drink is for you! This instagram and Tik Tok worthy drink only needs:

Ingredients
2 Tbsp Instant Coffee (Do not use 3 in 1 mixes)
2 Tbsp Hot water
2 Tbsp Sugar ( I used 1 tsp but it needs sugar to whisk up)

Instructions

  • Combine and mix the ingredients together using an electric whisk, milk frother or spoon.
  • Once the mixture turns light brown and becomes a foam, pour it into a glass of milk. Ta-da you became a barista in your own home!

2. Tiramisu

This tiramisu recipe only uses 2 egg yolks and makes 2 small portions. It is sans alcohol but is rich with coffee flavour. To save time, use store-bought lady fingers!

Ingredients (adapted from Cooking Tree)

  • 2 Egg yolks
  • 45g Sugar
  • 2g Vanilla extract
  • 250g Mascarpone cheese
  • 120g Whipped cream (whipped up 50%)
  • 200g Warm brewed Coffee
  • 6 g Sugar

3. Scallion Pancakes

My mother craved scallion pancakes so I made her fresh ones! I followed Angel Wong’s recipe.

Ingredients

  • 2 Cups AP Flour
  • 3/4 Cup Hot Water
  • 5-6 Green Onion Stalks
  • 1/2 tsp Salt
  • Oil

4. Basque Burnt Cheescake

This one bowl cheesecake recipe is super easy to make! The best part is burning it. I followed Emojoie Cuisine’s recipe but added more cream because the cheesecake becomes denser.

5. Sweet Potato and Ube Balls

Since no Asian dessert place delivers to my place, I made these sweet potato and Ube Balls to satisfy my cravings! I followed my grandma’s way of making tong yuen to create this dessert. For visual instructions, find the Youtube Video below

Ingredients

250g Sweet Potato
250g Ube / Purple Yam
180g Glutinous Rice Flour
70g of Tapioca Flour
