What is Dacqouise?
Dacquoise, macaron’s cousin, is an airy, lightly crisped almond meringue cookie filled with buttercream. Using similar ingredients as macarons, the dacquoise is way easier to make because it embraces an imperfect appearance. Cake flour is added as an extra “stablizer” but in this case, rice flour is used. No resting time or deflation anxiety is added with this cookie.
